Friday Dinner

At the end of a long work week, I really enjoy the opportunity to take my time and prepare a nice meal. While Nate toils away at the office/gym, I get to do one of my favorite things – cook! I usually listen to a classical music channel on Pandora and I find this makes all of the prep work quite relaxing. Since yesterday was Good Friday (no meat!) , I decided to make some seafood.

Broiled Salmon with Peach-Mustard Glaze (2 servings)


  • 1/4 cup (homemade!) peach jam
  • 1 Tb whole-grain mustard
  • 1/4 tsp salt
  • dash of pepper
  • dash of ground ginger
  • 2 (6 oz) salmon fillets


  • Preheat broiler, line a baking sheet with foil, lightly grease
  • Mix first 5 ingredients in a bowl
  • Place salmon on baking sheet, brush 1/2 of glaze on top
  • Broil for 5 minutes, brush on remaining glaze, broil 3 more minutes
  • Fish is done when it flakes easily with a fork



Jicama SlawJicama-Mango Salad (4 servings)


  • 1/2 large julienne-cut, peeled jicama
  • 1 small sliced, peeled mango
  • 1/4 cup diced red onion
  • 1 Tb lime juice
  • 1/2 tsp sugar
  • 2 Tb chopped cilantro
  • dash of salt and pepper

Combine ingredients in a bowl, set aside for at least 15 minutes, then enjoy!

These Fannie May spring mint melt-a-ways were brought all the way from Chicago. I told asked Nate to bring me a present when he visited the Windy City last weekend and this was the result! Each square contains a smooth chocolate center surrounded by pastel mint-white chocolate. Creamy and refreshing. Yum!
