Healthy Living Summit – Day 2

On Saturday morning, my alarm clock beeped at 6:30am and I was actually ready and raring to wake up. I guess I was excited about the day’s events! I headed across the street for a coffee from Dunkin Donuts and enjoyed my morning brew while took a 30-minute walk around the Public Garden and Boston Commons.

I returned to the hotel and made my way to registration and BREAKFAST. I perused the breakfast bar and was very impressed with all the selections of yogurt and granola available. I settled on a big bowl of melon, a vanilla Stonyfield Farm yogurt, a few spoonfuls of Goji Berry granola, and a piece of seed bagel with some light cream cheese.



After breakfast, the summit events began! The conference planners: Caitlin, Kath, Heather, Jenna, Meghann, and Tina.

Our first speaker was Janelle Orvut R.D. and I felt like she offered a lot of good advice. I really liked that she professed her love of desserts :-) My favorite tip of the day – fill your bowl with fruit first and then top it off with a little ice cream. That way you’ll still get to enjoy dessert, but you’ll be getting plenty of fiber and nutrients as well!

Zesty Cook followed with a great presentation on blogging 101 and web design. I already have a ton of new ideas for the blog! During this presentation, my early morning began to catch up with me. I nibbled on some apricots and a Kashi granola bar to keep my energy up.

At noon we broke for lunch. I topped a piece of whole wheat bread with turkey, swiss cheese, tomato, lettuce, onion, and roasted yellow pepper. I added some fancy potato salad and a pickle slice to my plate. The food was yummy, but for some reason I was just not hungry. I think my lack of sleep and the two drinks the night before really affected my body negatively :-(

Throughout the afternoon session I sipped on a ginger-ale and that made me feel a little but better. After hearing a presentation by Regina, an organic dairy farmer and a discussion on green beauty products from the editors of Body & Soul magazine, I finally felt ready for a snack. POM Wonderful sponsored an afternoon juice bar – I enjoyed ½ bottle of pomegranate juice over ice and some Annie’s cheddar bunnies. The free food and swag were my favorite part of Saturday!

After a presentation on Operation Beautiful and a panel discussion about fitness, we took a group photo of all 125 of us! Soon, it was time to say my goodbyes.

I hopped in a cab and headed to meet Nate at the bus station. Before leaving Boston, I enjoyed a portobello mushroom, goat cheese, and artichoke aoili sandwich from Au Bon Pain. Can you tell that portobello mushrooms are one of my favorite foods?! Portobello Mushroom & Goat Cheese

During the summit, we all had the chance to bid on the bake sale goodies. I carefully watched the bids for The Kitchen Belle’s “Kitchen Sink Cookies” and was excited that my bid was the highest! These cookies were packed with oatmeal, dark chocolate chunks, white chocolate chips, m&ms, nuts, and dried fruit. SO GOOD!! (p.s. just found out that the bake sale raised $700 for Leukemia and Lymphoma cancer research!)

On the bus ride home, Nate and I enjoyed quite a few Kitchen Sink Cookies. Seriously, so good. I think I ate about 7.

After an action packed two days, I fell asleep as soon as my head hit the pillow. The Healthy Living Summit was awesome – hello to all the lovely ladies that I met there! Can’t wait to put all of your blog design tips, healthy recipes, and workout ideas into action :-)
